As a chef and a dad, I'm always looking for ways to make healthy and delicious meals for my family without breaking the bank. Last night, I made a pan-seared ahi tuna with sautéed broccoli and steamed basmati rice that everyone loved, even my picky eaters!
The best part? I got everything I needed for under $20 at Aldi. It's amazing how affordable healthy eating can be when you shop smart and plan ahead.
To start, I seasoned the tuna with everything seasoning and pan-seared it until it was rare. This gave it a delicious crust on the outside while keeping it tender and juicy on the inside. For the broccoli, I sautéed it in a bit of olive oil with some minced garlic, salt, and pepper until it was tender but still had a bit of crunch. And for the rice, I steamed it with a bit of salt and a splash of coconut oil for added flavor.
The end result was a healthy and satisfying meal that was perfect for a busy weeknight. And the best part? My kids loved it! They're usually pretty picky when it comes to fish, but they devoured their plates and even asked for seconds.
Here's the recipe if you want to give it a try yourself:
Ingredients:
4 4-ounce ahi tuna steaks
Everything seasoning
4 cups broccoli florets
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
2 cups basmati rice
4 cups water
1/2 teaspoon salt
1 tablespoon coconut oil
Instructions:
Rinse the rice in a fine mesh strainer and add it to a medium pot with the water, salt, and coconut oil. Bring to a boil, then reduce the heat to low and cover the pot. Cook for 18-20 minutes or until the water has been absorbed and the rice is tender.
Season the tuna steaks with everything seasoning.
Heat a nonstick skillet over medium-high heat. Once hot, add the tuna steaks to the skillet and cook for 1-2 minutes on each side, or until browned on the outside and rare on the inside.
In a separate skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Add the broccoli florets and cook for 4-5 minutes, or until tender but still slightly crunchy.
Serve the tuna steaks with the sautéed broccoli and steamed basmati rice.
It's so important to continue to eat as healthy as possible, especially as food costs continue to rise. By shopping smart and cooking at home, you can create delicious and nutritious meals that won't break the bank. Give this recipe a try and let me know what you think!
