Fresh and Spicy Cucumber-Mango Salad with Crabmeat and Siracha Mayo

As a chef and a parent, I'm always looking for ways to create delicious and healthy meals for my family. This recipe for a refreshing and spicy cucumber-mango salad is perfect for those warm spring and summer days when you want something light and flavorful. And with the added bonus of artificial crabmeat, it's a great way to add some protein to your meal. Plus, it's easy to make and perfect for meatless Mondays!

Ingredients:

  • 1 large cucumber, diced

  • 1 ripe mango, peeled and diced

  • 1 package of artificial crabmeat, shredded

  • 1/4 cup of Kewpie mayo

  • 2 tablespoons of rice wine vinegar

  • 1 tablespoon of siracha sauce

Instructions:

  1. In a large bowl, combine the diced cucumber, diced mango, and shredded artificial crabmeat.

  2. In a small bowl, whisk together the Kewpie mayo, rice wine vinegar, and siracha sauce.
